My thermometer gift based on a scientific background flopped. Finding the thermometer glass column was capable of sliding up and down within the metal scale was disappointing. An attempt to calibrate the thermometer by suspending it in boiling water proved painful and ultimately the wrinkle test won through. Our marmalade recipe has passed down generations and has the stains to show it.
That’s so funny you should say that, Ian. This was exactly my challenge with the thermometer (we must have bought the same one). It’s reassuring that with all the modern technology, we still rely on old techniques. My next challenge is smoked marmalade- a friend told me that smoking the oranges first gives a gorgeous flavour. I will let you know how it goes.
